Till now nobody mentioned the biggest advantage of the twins: range and hit probability. At 25 km the Twins had around 10%, which is more than what the QE had at the same range. Ad the higher r/g/m. and you will find that it could have been disastrous for the RN

You can't visit Bismarcks turrets, however you can visit Gneisenaus turrets in Norway. Google for Austratt battery there you can find 11' Cäsar. The 15" turret is also installed in Norway unfortunately without guns. If you want to see a 16" gun look at Trondenes Fort

In my opinion it was not only exhaust of the senior officers, but from the people in the machine rooms. Each comand given from the bridge is hard work to open or close large valves manually.
